Alright, a fairly important technique for playing metal.

I understand the concept behind them, but I am unable to do them still.

Does anyone have any pointers for me? Anything that works well for you?

I'm getting frustrated, and I'd greatly appreciate some help.

Have the least amount of your pick sticking out as possible. Have your thumb hit first. Do it on the 4th string since it's the easiest place to do it. Move your stroking hand around since you can only get the pinch harmonics on certain parts of the guitar.

The way I do it is

1.) have as little of the pick out as possible. Move your fingers very close to the point
2.) Strike the string, but directly after let your thumb just barely touch the string, which lets the overtones come out creating a harmonic. You have to do it very lightly though, and make sure you do it right after striking the string with the pick. Also, make sure you put a little more pressure on the string so it vibrates more. Don't just pick it normally, strike it harder and more vertically than normal.

Alright, thanks for the pointers man.

I think my problem may be that I'm trying them on the G string, and I don't try hitting along different points.

The most important part, I think, is to hit it harder with the pick and softer with your thumb. That takes awhile to master. But as soon as you get it down to one fluid motion, it gets a lot easier. Also Taxer is right about the strings. You can only do it on certain points, so just experiment. I can only do it on the wound strings.

And one more thing, make sure you use extensive vibrato when you do it. Otherwise it sounds really crappy.

i hold the pick the way i normally do and just dig into the string more by bending my thumb into it. im not sure what i actually do though, i just do them. also try putting some fast vibrato on the string- that sometimes helps get it out becuase the pitch has to match the placement of where you are picking (the overtones have to match up or something, bending the pitch makes placement much less of a problem). I have a monstrous habit of overusing pinch harmonics (ask anyone in lor, i get made fun of Sad )
